Paleo Honey Nut Breakfast Bars

Ingredients

1 cup cashews, roughly chopped
3/4 cup walnuts, roughly chopped
1/4 cup pecans, roughly chopped
1/4 cup unsweetened coconut flakes
1 tsp vanilla extract
1 tsp cinnamon
Pinch of nutmeg
1/2 tsp salt
1/3 cup honey

Instructions

1. Preheat the oven to 350 degrees F. Line an 8×8 baking pan with parchment paper. Combine all of the ingredients except the honey in a large bowl. Stir until combined. Slowly drizzle in the honey and mix to coat.

2. Transfer the nut mixture to the baking dish and spread into an even layer. Bake for 20 minutes. Remove to a wire rack to cool for 30 minutes. Remove from the pan and flip over. Cool completely before cutting into bars. Keep refrigerated.

Ingredients

1 1/2 cups almond flour
1 tsp baking soda

2 eggs

2 oz. dark chocolate, roughly chopped
1/3 cup walnuts, chopped
1/3 cup unsweetened coconut flakes

Instructions

1. Preheat the oven to 350 degrees F. Line an 8×8-inch baking pan with parchment paper. Place the Goji berries in a bowl and add one cup of boiling water. Let sit for 10 minutes to plump. Drain and set aside.

2. In a medium bowl, sift together the almond flour, baking soda, and salt. In a separate bowl, whisk together the eggs, coconut oil, honey, and vanilla. Add the wet ingredients into the dry. Fold in the Goji berries, chocolate, walnuts, and coconut flakes.

3. Transfer the batter to the baking pan. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes before serving.
